Harvesting takes place in the cool of the morning to preserve fruit integrity. Grapes are hand-sorted in whole bunches and destemmed. Each classic Bordeaux varietal—Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec—is fermented separately in stainless steel tanks. Cold maceration over three days precedes controlled fermentation at 25–28 °C, with regular pump-overs to extract rich colour and tannins. After fermentation, the wines remain on the skins for 14 days, then undergo malolactic fermentation in tanks before being matured in 300 ℓ French oak barrels for 18 months. Barrel selection includes 15% new, 30% second-fill, 30% third-fill, and the remainder in fourth- and fifth-fill barrels. Careful blending of the finest barrels results in a wine of elegance, intensity, and complexity. Produced from the best fruit on the estate and matured in carefully selected barrels, The Bell Tower is our crown jewel—a world-class Bordeaux-style red blend that epitomizes winemaking excellence. On the nose, a mix of blackcurrant, ripe plum, and dark cherry is complemented by subtle hints of cedar and dark chocolate. The palate is caressed by velvety tannins, revealing layered flavours of blackberry, cassis, and elegant oak nuances, culminating in a long, soft, and lingering finish.
